Brrrrrrr…..It’s cold outside and when the weather is a bit chilly I want something good and warm to eat. Soup and Chili are two of my favorite winter foods. I love traditional chili, but often want something different. White Chicken Chili is one of my favorite foods ever. It’s comforting, yummy and a perfect meal to come home to. It’s a recipe that can be cooked on the stove or in the crockpot.
This Chili is filled with White Beans, Chicken, and Tomatoes. Honestly, if you are not a tomato eater you could make it without. My mom used to make White Chicken Chili years ago when I was younger and ever since I fell in love with it. The recipe she has doesn’t have tomatoes. I will have to share that one later. She found a recipe in her Church cookbook and ever since she has had me hooked on it. I love her recipe but it requires a lot more ingredients and time. If your like me I like things to be simple and fast when I am cooking.
This recipe is simple and really only takes about 30 minutes or so on the stove, or you can cook it in a slow cooker for 6-8 hours if you choose. It’s the perfect meal to come home too on a cold winter day.
Some ways we love to eat our White Chicken Chili include: Adding Advocados, Sour Cream, Cheese, Tortilla Strips or Tortilla Chips. We love taking the Tortilla Shells spraying some Pam on them and putting them in the oven (making chips out of them) we normally cut them in strips and dip them in the Chili. It’s my favorite way to eat the soup.
