Delicious Instant Pot Chili

So yesterday, late in the afternoon, I decided I wanted to have chili for dinner. Oops….too late to cook in the CrockPot! But I really wanted chili…NOW!! Instant Pot to the rescue! I could have chili prepped and ready within 45 minutes. One of the reasons I love the Instant Pot is that it is ONE pot cooking. One pot to clean! YES! It’s a lazy woman’s dream.

I have two Instant Pots; a 6 qt Duo Instant Pot and a 3 qt Duo Instant Pot. See below for the Instant Pots I use. I started with the 6 qt and absolutely loved it. So many foods, so many options. After a while I decided I would like to have a 3 qt also. And I am so glad I did. My husband and I are not big eaters so the 3 qt is more our size. But the 6 qt is great for company or if I want to fix extra for freezing.

Sometimes I have both pots going at the same time with a main dish in the larger one and a side dish in the smaller one. Other times I might have boiled eggs in one and carrots cooking for our dog’s dinner supplement in the other one. Use your imagination to think about all your options.

One of my favorite things to fix in the Instant Pot is Chili. Forgot to thaw your meat? No problem…use the Saute function to brown the meat and break it apart before you add your onions and seasonings to finish browning the meat. Easy peasy. I use lean ground beef so it’s not necessary to drain the grease after browning. But if you use a different grade of meat and need to drain it, the easiest way is to use a Turkey Baster. You can suction the grease right out of the pot. Then you are ready to add the rest of your ingredients.

Did you know there is a Warm Function on your Instant Pot? Once you set your Instant Pot by using one of the preset buttons or pressure button, the Warm Button should light up also. When it is finished cooking it automatically changes to Warm. Great feature! Once I made my chili it was time for Wednesday night church so I left it on warm and when we got home it was ready for us to eat.
